LEAVEN/SOURDOUGH BREAD #1
After yesterday’s sourdough/leaven starter recipe, here I am with the bread recipe using that starter. I’ve used bread flour and 3 kinds of seeds : flax, sesame and millet.
Before starting, make sure that your sourdough is in its strong phase, how do you know that? Pour a little bit of sourdough into some water, if it floats, it’s good! The recipe can be done by hand, personally, I sometimes use a robot or my hands. Never knead a dough using leaven, you want to keep all the gas in the dough.
