Je vous propose, aujourd’hui, une tourte, recette que m’a réclamée, mon mari pour son anniversaire, il y a quelques jours.
Il m’avait demandé une tourte au poulet et champignons à la base, mais ayant acheté de très beaux poireaux deux jours avant, je lui ai proposé de les rajouter à la recette et voilà le résultat.
J’ai choisi de la faire avec de la pâte feuilleté, mais une pâte sablée se prête aussi bien à la recette.
J’ai omis le sel volontairement, dans cette recette, il n’y en a pas besoin, avec le fromage.

Tourte de poulet, poireau, champignons bruns
Ingredients
- 2 pâtes feuilletés
- 3 escalopes de poulet
- 1 poireau entier
- 10 champignons de Paris bruns
- 100g de fromage
- 30cl de crème liquide
- poivre
- 1 petite noisette de beurre
- 1 cuil. à soupe d’huile
- 1 œuf entier battu
Instructions
- Hacher les champignons en fines lamelles et réserver.
- Laver le poireau, en enlevant bien le sable entre les feuilles, le hacher en rondelles.
- Dans une marmite, faire fondre le beurre, sans le brûler (rajouter une goutte d’huile neutre si besoin) et y jeter les rondelles de poireau.
- Les faire suer jusqu’à ce qu’elles aient bien fondu.
- Réserver.Pendant ce temps, hacher le poulet en petits dés.
- Dans une poêle, verser l’huile et la chauffer, ajouter le poulet.
- Poivrer, et faire dorer, à feu vif, pendant quelques minutes.
- Ne pas faire dessécher la viande.
- Ajouter le poulet au poireau et réserver.
- Dans une poêle chaude, faire suer les champignons et ajouter au mélange précédent.
- Ajouter le fromage, la crème, poivrer et bien remuer.
- Réserver.
- Préchauffer le four à 200°C (th.6/7)
- Dans un plat à tarte, foncer 1 première pâte feuilleté, verser votre appareil (mélange poulet, poireau, champignon, crème, fromage).
- Recouvrir de la 2ème pâte feuilleté, bien envelopper les bord, en retournant la pâte du dessus, en dessous celle du dessous.
- Refermer comme une enveloppe en gros.
- Avec le dos du couteau, faire un décor sur la pâte feuilleté.
- Badigeonner d’œuf battu, à l’aide d’un pinceau.
- Enfourner pendant 45 minutes à 200°C (th.6/7) 390°F

Leek, Funghi and Chicken Pie
Today’s recipe is a pie, recipe that my husband asked me for his birthday a few days ago.
He had asked me for a chicken and mushroom pie, but having bought some very nice leeks two days ago, I suggested adding them to the pie.
I chose to make it with puff pastry.
I omitted the salt on purpose, there’s plenty of cheese.

Leek, Funghi and Chicken Pie
Ingredients
- 2 puff pastry sheets
- 3 chicken cutlets
- 1 whole leek
- 10 brown funghi
- 100 g cheese
- 30 cl of heavy cream
- pepper
- 1 small knob of butter
- 1 tbsp. oil
- 1 egg, beaten
Instructions
- Chop the funghi into thin strips and set aside.
- Wash the leek, removing the sand between the leaves, and slice it.
- In a pan, melt butter, without burning it (add a drop of neutral oil if necessary) and throw in the leek slices.
- Sear them until melted.
- Set aside.
- Meanwhile, dice chicken.
- In a frying pan, pour oil and heat it, add diced chicken.
- Add pepper and brown over high heat for a few minutes.
- Do not let the meat dry out.
- Add the cooked chicken to the leek and set aside.
- In a hot pan, sear funghi and add to the previous mixture.
- Add cheese, cream, pepper and stir well.
- Set aside.
- Preheat oven to 200°C (th.6/7) 390°F
- In a baking dish, line the first pastry sheet, spread micture on it (chicken, leek, mushroom, cream, cheese).
- Cover with the second puff pastry, wrap the edges well, rolling over the top pastry, and underneath the bottom one.
- With the back of the knife, decorate the top puff pastry.
- Brush with beaten egg.
- Bake for 45 minutes at 200°C (th.6/7) 390°F
